Field Service Lightning Mobile app - Picklist values cannot be de-selected.

Starting in FSL 5.0 mobile app, Picklist values are now displayed as Radio Buttons. After this change, users are now unable to unselect / de-select the picklist values.
This is something that Salesforce Engineering is aware of and working to correct.
1. Log into the Field Service Lightning Mobile app
2. Navigate to a record that contains a picklist value.
3. Observe that you're unable to remove a value from the picklist.
Update the Picklist Values on desktop.
