Field Accessibility for the Record Type fields is ignored in Lightning. Setting the Opportunity Record Type field to Read Only in the layout works in classic but the field is editable if you change to Lightning.

Since Winter '19 (with the fix to W-4581278) the translated Salutation values are passed from the Lead to the converted Contact, however, that value is pushed as a "new" value, an inactive one created during conversion.
