Unwanted Case Assignment Notifications When Using Process Builder

We recently tried to implement Lightning Process Builder as an all-in-one process to handle our new cases as they come in. The process assigns cases to the correct queues or owners based on the categories that our customers select, and also updates several fields and sends a custom notification (only when we want it to).

The problem that I am noticing is that the system started sending unsolisited "Case Assignment Notifications" in all situations on top of the custom email notification that we added to the Process Builder. After searching online, it seems like this is happening because we no longer have assignment rules active. I have no way to turn off these notifications and this is now preventing us from utilitize the new Process Builder.

I have confirmed the following:

1. Support Settings - Notify Case Owners when Case Ownership Changes: (This checkbox is deactivated in our configuration)

2. EMail Alert: The process builder is set up to only email in certain situations, and it uses a custom template. The new email notifications we're noticing are not using the same template.

3. The "Send Notification Email" is unrelated as we're not transferring a case in this scenario, however it's still set to default off for good measure.
