Data Loader should warn you when you have selected "Insert Null Values"
Administration & Sharing
In Data Loader, the "Insert Null Values" setting is very helpful sometimes for clearing out values, but can have drastic unintended consequences if you forget to uncheck it. Immediately before making an update with Data Loader, it should give you one final warning with a chance to confirm or cancel the operation.
Something like: You have chosen to insert null values. If any value in the source file is blank, the value in Salesforce will be overwritten with a null value. Are you sure you want to proceed?
