This is very important functionality and should be included. Otherwise it is difficult to test and troubleshoot when developing new processes. If you are worried about the volume of email stored, then make it something you turn off and on based on the function and limit what is kept to only the past 7 days.

It's a very effective workaround. We made a free simple app that you can use in process builder or flows that sends emails and logs activity.

Please Salesforce still address this issue and make it standard (with the option to choose to log or not)

I can't believe this idea was posted 11 years ago and it's still not a reality. Do you know how many times I've been asked "Where can I see if that workflow email was sent?"and how silly it sounds when I answer that they actually can't? I agree with the previous comment about at least including email template name recorded in the email log.
